Oatmeal Cookies

These are a breakfast favourite. Some recipes demand to be followed to the letter, while others are open to interpretation. This simple cookie recipe is definitively the latter. Feel free to substitute the fruit or add peanut butter for a nutty twist.

You can make the dough and freeze without baking. When you are ready, preheat the oven to 160ºC and bake for 12 minutes. Just the same and perfect every time!

    Ingredientes
    • 110g wheat flour
    • 110g oat flakes
    • 90g coconut oil
    • 70g panela sugar (unrefined whole cane sugar)
    • 40g molasses
    • 7-10 dried apricots, cut into small pieces
    • 30g sunflower seeds
    • 20g water or oat milk
    1. Mix the water, oil, sugar and molasses over low heat and stir with a whisk until well blended.
    2. Meanwhile, mix the dry ingredients in another bowl.
    3. Use your hands to coat the apricot pieces well in the flour so they do not stick.
    4. Once the sugar and oil mixture is ready, combine with the dry ingredients.
    5. Make small balls and flatten them on a baking tray.
    6. Bake in a preheated oven at 160°C for 12 minutes (180°C for non fan assisted).
